A leading Japanese matcha producer asked whether the US opportunity was real; alongside it, a read of US bubble tea where the drink scores 94% on taste and the cup scores 41% on value — a 53-point gap that points straight at packaged goods.

A leading Japanese matcha producer asked where to play in the US. The instinct was to go where matcha already moves — the volume names, the coffee-shop channel. We read consumer traffic and opinions across every US venue where matcha is sold, brand by brand, channel by channel. The volume map points the wrong way. The names with the most matcha demand are the names whose consumers are most disappointed by it. That disappointed demand isn't lost — it is pooling at authentic specialists who score 50 points higher.

The volume leaders are 61–64% negative on their own matcha. Their disappointed demand doesn't evaporate — it leaks to authentic specialists scoring 88–93% positive. And that quality isn't a lucky average — it's a structural floor. Across every Japanese restaurant venue with enough matcha opinions to measure, the floor is 80%-positive and the spread is tight. Sushi venues score 82%+ without exception. A producer entering through this channel isn't cherry-picking outliers; they're riding a standard the channel already holds.
